Here is Volume 2 of the brewing manual written and published in 1897-1898 by Ernst Hantke, a German-trained brewer who came to America and worked for the Schlitz brewery and the Wahl-Henius Institute of Fermentology before starting a brewer's academy in Milwaukee.

The book is one of the most extensive published records of American brewing practices and equipment of the pre-Prohibition era with its 800+ pages. It shows hundreds of illustrations, mainly of late-nineteenth century brewing equipment.

The book is printed entirely in German, in keeping with the pre-prohibition tradition of American brewing schools instructing only in German. While volume 1 (not included) was dedicated to the practice, science and chemistry of malting and brewing, volume 2 is devoted to the mechanical operation of the brewery and malthouse. Hundreds of illustrations of nineteenth century brewing equipment are shown. Many are very possibly the only surviving depictions of their subjects.
