Here is Volume 1 of the brewing manual written and published in 1897-1898 by Ernst Hantke, a German-trained brewer who came to America and worked for the Schlitz brewery and the Wahl-Henius Institute of Fermentology before starting a brewer's academy in Milwaukee.
The book is one of the most extensive published records of American brewing practices and equipment of the pre-Prohibition era with its 600+ pages.
The book is printed entirely in German, in keeping with the pre-prohibition tradition of American brewing schools instructing only in German. While volume 1 was dedicated to the practice, science and chemistry of malting and brewing, volume 2 (not included) is devoted to the mechanical operation of the brewery and malthouse.
