Here is the third printing of H. Lloyd Hind's two-volume set -- over 1,000 pages describing every aspect of the scientific state of brewing in 1948, profusely illustrated throughout. Volume One is BREWING MATERIALS containing sections: "Barley," "Biochemistry of Malt and Wort," "Malt," "Sugar, Specific Gravity, Extract and Polarimetry," "Hops," and "Water." Volume Two is BREWING PROCESSES containing sections: "Brewery Equipment", "Wort Production and Composition," "Wort Boiling and Cooling," "Fermentation," and "Microbiology and Biochemistry of Fermentation." Each section contains multiple sub-chapters. Separately, these books are each difficult to find. To have both volumes together, each with their dust jackets intact, is truly rare.
