Steel, a Scottish brewer, offers his methodical approach to brewing, and surveys faults in other brewing texts of his era (1878). Includes sections on "Export Beer," "Summer Brewing," "Bavarian Brewing and Fermentation," and analysis of famous brewing waters of Europe. Illustrated with 10 plates.

Condition: Good. Professionally restored with new spine and end papers attached to original boards, which show rippling about 2" from edge. Inside text very clean.
